Make a Starter:
1 C Flour (Bread or AP)
1 C Water
1/2 tsp Dry Active Yeast: If you want to help your starter along faster
Starters take anywhere from 12 hours to activate, to as long as you wish to keep them alive by removing 1 C of starter and adding in the above ratio.
1 C Active Starter
2 Tbsp Dry Active Yeast
1 Tbsp Sugar
2 C Warm Water
4 C Flour
2 Tbsp Olive Oil
For a true Neapolitan Style Pizza Dough you’re going to want to put your dough through a slow proof. BUT, I’ve made the process super easy by leaving it in a bowl overnight so it is ready for your dinner the next day :)
Combine the yeast, sugar and a pinch of salt in a large bowl with warm water. Sit for 5 minutes.
Add your starter and mix into the yeast/water mixture to fully combine. Add 2 cups of your flour into the mix and thoroughly combine to make a thick paste. Then add your next two cups of flour to make a soft, but very wet dough. THIS IS KEY!
Leave to rest in the fridge or a dark, cool place overnight covered with a towel. This will allow the dough to proof but slow the process down to make a more rich, deep flavourful crust with the that signature chew and delicious bubbly interior that you’re after!
The next day, shape into dough balls (This gave 4 dough balls for me) and set aside to proof while you prepare your pizza toppings (approximately 20-30 minutes). Roll out on a floured surface and add all your toppings before cooking at a high heated oven (550F was my cooking temperature!), BBQ or pizza oven. Nothing left to do but enjoy the delicious Neapolitan Style Pizza that you made in home :)
