Grilled Potato Salad

It’s BBQ season; Let’s Get Barbequing. Each Friday in lead up to the Canada Long Weekend, I will be sharing bbq inspiration recipes for you to enjoy and cook along for your family and friends. First up: Fresh take on a Potato Salad.


INGREDIENTS:

  • 6 Large Potatoes

  • 2 Large Spanish Onions

  • 1/4 C Olive Oil

  • 1 Tbsp Dijon Mustard

  • 1 Tbsp Mayo

  • 1/8C Vinegar (I used Sherry)

  • 1 Tbsp Honey

  • 1 Tbsp Worcestershire

  • Herbs (Parsley & Chive)

INSTRUCTIONS

  1. Dressing:

    - Mix together 2 parts oil with one part vinegar. (ie., 1/4 oil to 1/8 vinegar)

    - Add 1 tbsp of dijon, mayo, honey and worcestershire each. Season with salt & pepper.

  2. Slice potatoes and onions in 1/2 inch thick slices (wash the potatoes and remove the onion skins)

  3. Lightly oil and season with salt and pepper. Add to a medium-high heat grill and grill on both sides for about 12 minutes per side

  4. Chop the potatoes and onions in rough cubes. Toss in dressing to cover generously with chopped parsley or other fresh herbs. Garnish with freshly chopped chives and enjoy :)
