Brownie like Banana Bread...

I’m the type of person who wants to eat food that is already so good it DOESN’T need additives…Trust me when I say that this bread is already too GOOD on it’s own!

INGREDIENTS:

  • 2 C Sugar

  • 2 C Sifted Flour

  • 1 Whole Egg

  • 2 1/2 C Fermented Banana

  • 2 C Shredded Carrots Packed Tightly

  • 1 C Sliced Almonds

  • 1/2 C Chocolate Shards

  • 1/4 C Cinnamon

  • 1 tsp Baking Soda

  • 1/2 Tbsp Baking Powder

INSTRUCTIONS

  1. Preheat the oven to 375F

  2. In a Stand Mixer or Large Bowl with Hand Mixer, whip together egg and sugar until slightly opaque in colour

  3. Add in the fermented bananas along with the sifted flour, baking soda and baking powder in alternating batches until fully incorporated

  4. Using a spatula fold, in the carrots, chocolate shards and sliced almonds until fully incorporated

  5. Pour the mix into 2 greased baking loaf pans and place in the middle rack of your oven

  6. Bake for about 1 hr. (Yes low and slow) until you have a nice crust around the edge and a toothpick comes out clean from the middle. It could take you longer based on your type of oven, but keep in mind this is the consistency of a brownie; AKA Soft & Fudgey! So enjoy the gooey goodness this bread will bring you :)
