Carrots with Attitude!

The time has passed for bland and boring veggies…It’s the era of FLAVOUR. Give these carrots a go for your next side or main dish, It will not disappoint!


  • 1 Bag of Carrots

  • Mint Sauce (Store Bought OR Fresh Mint chopped with Vinegar & Seasoning)

  • Butter and/or Oil for sautéing

  • Balsamic Glaze

  • Parmesan Cheese (Or your favourite sharp hard cheese)

  • Pea Sprouts

  • Hazel Nuts (Can be substituted for seeds, but you want that crunch!)



  1. Bring a large pot of water to a boil

  2. Peel carrots. Cut them in similar size pieces. You can cut rounds, off shape chunks or slices like seen in my picture

  3. Cook the carrots for 2-3 minutes in boiling and salted water until fork tender and immediately remove and add to your heated pan

  4. Pan sear the blanched carrots with a Tbsp of butter or Olive oil. Season with salt & pepper to your taste

  5. Plate your carrots with dollops of mint sauce, a drizzle of balsamic glaze, crushed up hazelnuts or seeds, a toss of pea sprouts, generous shaving of cheese and the drippings from the pan. Toss it all together and you have a delicious and fun veggie side that everyone will love!
