To honour Persian New Year’s I have created this delicious flat bread called: BARBARI, which for the love of me I can’t pronounce correctly haha please teach me!
2¼ tsp Dry Active Yeast
1 tsp Sugar
2½ tsp Salt
4 C Bread Flour (AP works too) + additional for dusting the table/pan
Nonstick vegetable oil spray
2 tsp All-Purpose Flour
1 tsp Baking Soda
1 tsp Vegetable Oil
Sesame Seeds (optional)
Nigella Seeds (optional)
Poppy Seeds (optional)
This delicious Flatbread deserves a special honour due to its versatility to go with just about anything! Here’s how to make this super simple and delicious bread
Combine the yeast, sugar and 1 1/3 C warm tap water (hot to the finger) in a mixing bowl and let sit until frothy. With a dough hook attachment, slowly add the flour 1 C at a time until the dough is pulled away from the sides, but will still stick to the bottom.
Remove from the bowl and use a dusting of flour to form the dough into a smooth ball. Spray the bowl with nonstick spray or a coating of oil and place the dough ball back in to rise under a loosely covered towel for about 1-2 hours.
While it is rising you are going to prepare the simple topping to coat the bread in prior to baking. THIS IS KEY to achieving that signature chew and crust affiliated to this bread. Combine the baking soda, vegetable oil, 2 tsp of flour and 2/3 C of water in a small saucepan. Whisking constantly, bring this up to a slow boil until it turns into a thick sauce.
Cut your proofed dough in half and stretch out on your counter in long oval like shapes. Using your fingers or I used a bench scraper, make long marks in the dough (without fully cutting it) lengthwise. Brush the thick paste from above over the entire dough. Sprinkle with mixed seeds or black and white sesame seeds as I did and bake on a parchment lined baking sheet in a preheated 450 F oven! Enjoy :)
